Potluck Offerings: Stuffed mushroom caps, baked spinach and artichoke dip, and BBQ meatballs.

I don’t typically cook vegetarian or vegan meals but I completely forgot that grocery stores are closed today. So what’s a girl to do? Improvise with what is on hand! The two items I made don’t really go together but I wanted to try out a recipe for Chinese cucumber salad.
